mjg, morning....  Looks like it got warm in the smoker.....   I would suggest, putting the smoke gen on the lowest level and putting a big soda  bottle above the gen... have it 3/4 full of frozen water...  the ice will reduce the heat effect of the soldering iron and smoke.... Keep the top vent wide open for heat to escape....  It's a trial and error thing... just like most smoking....  be sure the electric burner is off also....  Jack cheese seems to melt at lower temps than cheddar melts too......  Daub the sweat off the cheese and vac-pack for a few weeks in the refer to mellow...  Dave

I agree with Dave - too much heat but it will still taste great after you let it cure

Nice try although as said, the heat got to the pepper jack. I've used the soldering iron and always sit it on the very bottom of the smoker, which seems to help as does the ice.

Half the fun of getting to perfection is eating your failures!!!

Next time, do not place your cheese directly above the soldering iron.

Place your soldering iron on the bottom rails, and use the water pan to deflect the heat
