Had a 10 pounder in the freezer from back when they were $2.99/lb. Wife wanted some freezer space so being a good guy I smoked the brisket. Starting cook weight was about 7.8LB after trim, cooked at 180 (high smoke) for 2 hours then 270 till probe tender and 195-205 IT. IT was a chilly day here but the Rec Teq was unscathed. Rubbed with Meat Church Holy Cow - LOVE THAT STUFF
