I initially started a thread HERE and never got around to it last weekend but was determined this weekend to smoke some ribs. I only did one rack in case I screwed it up somehow.
Well it was more of a time consuming process that I thought. I had to constantly keep stoking it to keep the temp up, I never got above 200 but I did the 2-2-1 method on it then finished it off on the grill for about 20 mins on high to get a crisp to it.
to be honest, i thought I was in over my head but the true test was when I took my first bite and fell into instant heaven with it. They were AMAZING!!! I didn't even need bbq sauce for them, wow!!!
Here they are getting ready to go on the grill, just used some Famous Dave's BBQ Rib dry rub.

Learned a lot on this first smoke, some ways to make things better (more holes into the pan for ventilation), etc. Next time I plan on smoking more items at once to get more out of it.
