I've never seen a rib cut with that much attached meat.
I'd be worried the meat end would be shoe leather long before the rib end got edible.

I use this recipe as a base and then adjust to my taste. I bump up the coarse pepper a lot and add both powdered and minced garlic. We like it sweeter so I just add to taste. I woke up this morning thinking about this thread. I’ve got two whole chickens going on the smoker later today; and made this white sauce to go along with it. Got it sitting in the fridge now, and I’ve gotta say, it’s REALLY good. I’m sure it’ll even get better. I too jazzed it up w more pepper and extra minced/garlic/powder. I used chef jimmyj Lexington style sauce as a base. Added ketchup to taste and a lot of extra sugar free sweetener to taste. It turned out awesome, people devoured it ok pork recently.
