So have smoked about 10 briskets now and have been looking for a prime brisket in my area. In case you were wondering, there aren’t any stores that sell prime brisket in the Shreveport/Bossier area. Closest place to get them is in Carthage,Tx, about 53 minutes from my house.

So today driving back from Dallas, we decided to detour off the interstate and see if they had any primes.

They had 3 and I got the best one. Will smoke it on Thursday of this week and will keep y’all updated on the process.

The best part is that they are only $3.49/lb!!!! Hope it’s worth it.
 
Your gonna be real happy about that prime. All I use anymore. They are worth the extra money for sure. And the pink butcher paper is also worth the purchase! Good luck with that first prime!

Sure is a nice looking hunk of meat. Full packers are scarce around here let alone prime.

Hard to get Prime here too, but they sure are worth it if you can find one!

Well today’s the day!
I just got the brisket on about 30 min ago and used only salt and pepper for the rub. Don’t think I’m gonna wrap it. Had good success at a competition we did in April not wrapping so gonna just let it ride.

Planning to eat it for dinner tonight and going hot and fast/however long it takes. Will keep y’all updated.

$3.49 for Prime???---Around here, if you can find one, they get that much for "Choice"!!

Burning some bigger hickory logs today which is kinda why my temps are doing what they are. And I’m working and not staying on top of it too closely.
 
Put two bigger logs on and it got too hot. Had to move them around and cool it off a bit.
Otherwise the point is catching up with the flat. It is like 4 times thicker than the flat but the brisket is getting fairly tender now. Have poked it with a metal skewer to see how tender it is. Still not there but better than I thought. I’ve heard of prime briskets getting tender sooner than select/choice so we shall see.

Almost 8hrs and getting close to done!
And look how that point caught up to the flat and are even. Crazy how that works.
