Had a day off yesterday and the day was decent so I needed to heat up my smoker and cook something. A local supermarket had corned beef flats on sale for $1.99 a lb so I picked one up. It was 5lb but I didn't want that much so cut it in half and made pastrami out of half and saved the rest for the weekend. Soaked it for 2hr changing water every half hour then put my rub on it, let it rest a little while and got the smoker heated up.

When it got to 150* I wrapped it and took it up to 190*                                                                                                                                                                                                         I used apple chunks for smoke and it came out good.

Looking Good, keep us posted
