Finally found Dino ribs!!!

The few spots I have looked for them just have not had any. This has been driving me nuts. As I stopped at the store for some beverages I happen to walk by a display and looky looky whats in it. Beef Back Ribs. I went ahead and bought a few packages. I figure I will rub them tomorrow night and cook them off Sunday for the games! I am so happy I finally found them. I have not had ribs like these since I was a lil kid livin in Iowa.
I will let you know how they come out! I assume 220 and do the 321 method?
 
Maybe I just have not looked hard enough but I never see them! Put them on the list for Florida Smoke Out II
 
Just a good low and slow cook is really all that's needed for Dino Bones. Lots of fat in the meat. Have done them both ways...with foil and without. I've found by foiling them, they do get "fall off the bone" and the mrs and I prefer a slight "tug" to the meat. Prep like any rack of ribs. Spritz with your favorite mop/baste every hr after the first hr.

You know I loved living in FLA. I always wanted to go back. I keep reading how so many things are hard to find from cuts of meat to fresh tomatillo's.
I guess I'm thankful to live in this area of the country. I never have any trouble finding anything!
 
Vlap are these singles or a slab? Beef ribs really don't need 6 hours. My last dino ribs I pre cut them into singles, threw them in a large plastic baggie with some mojo and then smoked them for 3 1/2 to 4 hours. Most of the singles I buy come in 3 to 4 to a pack.

What I found was half slabs. My meat market won't get them due to how they are cut now. He did not feel they were worth the money. I am able to get what I want/need here. Its more a matter of looking. Fresh Tomatillios? They are everywhere.

Hey vlap, I've done them twice, the first time they were excellent, second time a little tough. My problem both times...my smoker caught on fire. I was only using my little electric one too! They have enough fat on them that they dripped down and I guess ran to the element and whoof. Well I didn't catch the first one right away, so I had excellent bark on the outside, not burnt, just right. The second ones were ok, but tough, I think the fire screwed up my time and temps, where the first ones they were just about done...
 
I do beef ribs in a disposable aluminum pan because of that. I have a rack I will put in bottom and place ribs on top. Juices (fat) then drops down beneath ribs, but not onto fire.

these dino bones.. are they the ribs that are cut off of a prime rib??

if so, i got some in the frig right now waiting to go ont he smoker tomorrow.. i have some rub on them now, any other tips for me??
 
Cooked up the ribs yesterday and a good thing I did. Had family come over in a last minute plan for dinner. The ribs became an appetizer and a good soup the main course. The ribs cooked for 4+ hours and pulled back nicely. The meat was tender and flavorful. I will have to get more of these ribs and cook them up in the future.


Unfortunately I did not get any pictures of the before or during stages. Just a shot of the last few before being consumed.
