Made a batch of kraut, and trying my first batch of half sours and some carrots. I’ll let the kraut go for 30 days and plan on checking the pickles in around 6 days (This is what I read for a general
Time length. I’ll let you know how the pickles and carrots taste, already know the kraut will be tasty!

6 days work for half sours. But, you'll need more for carrots. I go two weeks. 30 days is good for kraut.

Fermented pickles have a more "sour"than dill flavor. Delicious! A half sour means just that. 1/2 the sour level then a fully fermented pickle.

I love doing half sours and also letting them go full sour sometimes. Love fermented green beans too. I need to do a batch of kraut soon, it's been awhile.

I’ve got a batch of whole cabbage I fermented for cabbage rolls/sarmale. Last year that’s been in the fridge vac seal bags I’m about to use for the cabbage rolls. If you’ve never had Romanian cabbage rolls they are fantastic.

I don't believe I have. But, I would like to know more.

I need to do a batch of kraut soon, it's been awhile.

Me too. Food Lion has cabbage "on sale" this week for 49¢/lb. Not the deal from just a couple of years ago when cabbage was regularly 19¢/lb. or 29¢/lb., but plenty cheap enough...

Update on the fermented veggies. Still haven't tried the carrots or kraut as I'm letting those go a full 30 days. The pickles are awesome. They taste similar to a Bubbies dill, but with more heat. My kids love them and the brine.
