Hey all! I did my first smoke of the season. I'm trying to figure out what I am doing wrong. I'm not getting bark. I covered the ribs with a mixture of brown sugar, salt, pepper, garlic and onion powder, and smoked paprika. Left in the fridge uncovered overnight (about 12 hours) than cooked for about 6 hours at 225. The last hour I did a coat of my BBQ sauce and than let it cook. I feel like I got ok smoke rings but not an abundance of smoke and no bark. Also the meat still had quite a bind to the Bone. Here are some pictures after the cook

At 225F for 6 hours uncovered there’s a good chance they weren’t done to the right temp to be tender. The outside looks pretty good to me. I don’t see a huge thick bark on ribs typically.
 
I agree with Jcam. I generally don’t get a ton of bark on ribs and I do smoke my ribs to temp .(Smokin Al has a great recipe to smoke ribs to temp, but I’m not real tech savvy to link the recipe.)
