I just smoked some side ribs, and they were alittle tough aroun the edge. I did them for about 5 hours or so and they reacehd abt an average temp of 180. Perhaps this was too high? If so any idea on how I can lower my tempt (I use a propane burner to burn a box of wood chips). Any tips would help, they didn't taste bad, they just were alittle tough.
