That looks kill'er, you just gave me a great idea for my next dinner.
I don't cook for myself on the weekends much because my woman is working. I cook and or smoke during the week these days.

And it gives me an excuse to hit up my favorite Mex joint or Italian deli for a sandwich.

Looks amazing Justin! I LOVE elk. but I dont hunt. one my oldest friends use to run out of freezer space and hook me up. Those day are over, very sad about it.

Although, they are elk farms here and local restaurants sell elk burgers.
