We went to the farms in Pueblo yesterday. Stopped in to Musso's and found some Italian striped eggplant.
I knew what I had to do...
Had to make eggplant parmesan, so I started a batch of homemade sauce.
Sliced the eggplant about 1/2 in thick.
My youngest son (8) helped with dredging the eggplant with flour, egg and panko breadcrumbs.
Oil in the pan and fried em up, 3 min on one side, 2 min on the other.
The Mrs's helped fry the eggplant and whipped up a salad with some other stuff we got from the farms.
This came out phenomenal, I'll be using that kind of eggplant from now on.
Incredibly tender and not mushy at all.
Got 3 - 32oz jars of sauce for the freezer too.
Penn says he has a new favorite dinner, lol.
