Eggplant parmesan - with Italian striped eggplant.

We went to the farms in Pueblo yesterday. Stopped in to Musso's and found some Italian striped eggplant.
I knew what I had to do...

Had to make eggplant parmesan, so I started a batch of homemade sauce.

Sliced the eggplant about 1/2 in thick.

My youngest son (8) helped with dredging the eggplant with flour, egg and panko breadcrumbs.
Oil in the pan and fried em up, 3 min on one side, 2 min on the other.

The Mrs's helped fry the eggplant and whipped up a salad with some other stuff we got from the farms.

This came out phenomenal, I'll be using that kind of eggplant from now on.
Incredibly tender and not mushy at all.

Got 3 - 32oz jars of sauce for the freezer too.

Penn says he has a new favorite dinner, lol.

One of mine too, surprisingly this one didn't make near the mess it usually does, and I had an 8 year old doing the dredging lol.

Won't be long and my eggplant will be ready to pick. This is at the top of the list...

If you can find the Italian striped eggplant, I highly recommend it.

I am getting ready to make a squash lasagna but maybe need to try this? I use salt to pull moisture than give a quick grill. Guess this would work on egg plant?

yes Brian salting the eggplant is typical. bread with pork rinds to really limit the carbs.
