I'm still in the SV camp. 190° for 20 mins, into ice water. Shells come off in just a couple pieces.

Since it’s SV can’t you set the temp you actually want and come back whenever? I remember seeing a SV experiment showing the different levels of yolk doneness at different temps.

Yeah, I don't remember if it was a temp adjustment or the actual time. I re!ember seeing that chart somewhere though.
I have no experience beyond the 20 mins on how the egg would peel.
 
Forgot to mention. The switch on this first couple I bought broke. I now just leave it on and unplug when done. Not sure about that one though.
 
These things are a no-brainer. Perfect eggs done in 10 min every single time with a shell basically falls off. Set it and forget it. Very few better kitchen gadgets for $20.
 
I'm not certain we have room for another gadget, and I'm still old-school when it comes to boiled eggs.

Lower the eggs into the pot of boiling water with a metal mesh strainer. Seven minutes for soft boiled, and twelve minutes for hard boiled. Ice water for the soft boiled. Drain, cold water rinse, and refill with cold water for the hard boiled. Couple of minutes. Roll it on the counter. If I can get the membrane to break, the peeling is generally not a problem. Maybe not two pieces, but I get there.
