Would a polyethylene backyard shed be a bad choice for a cold smokehouse? Does it give off volatile compounds that could get into the meat being smoked?
 
Some of the volatiles in smoke, like hexane, acetone, benzene, PAH's, creosotes "could" do something to the poly...    Now, whether or not they are as bad for you as the stuff in smoke, needs to be discussed over a case of good Canadian Rye...  for a week or three...  around a campfire...
