My Dad swears by this thing, so I bought one.

I will probably grab a brisket resting blanket after the holidays.

And due to my briskets being up and down and all over the board, one dry, one perfect, one so so, I have decided to up my game by learning more about brisket as a cut and the prep and methodology. I ordered this off ebay last night for $6.75.

I want consistent results every time.
