I'd love to say I followed Bearcarver's instructions, but I can't find my remote probe, so I'm winging it.

The cure was bag measurement directions from Tenderquick with equal amounts of light brown sugar.

I didn't add any salt after the rinse, because they both have plenty of flavor without it.

I wish I had pictures of the 30 lbs of Pork Roll I did last week... it's all part of getting ready for camping season.

Bacon is in 2 weeks.
 
Dried beef is in the analog MES and the Canadian Bacon is in the propane Ozark Mountain smoker.
