Dried Beef and Canadian Bacon

    Sorry for the lack of pre-game pics...

    I'd love to say I followed Bearcarver's instructions, but I can't find my remote probe, so I'm winging it.

    The cure was bag measurement directions from Tenderquick with equal amounts of light brown sugar.

    I didn't add any salt after the rinse, because they both have plenty of flavor without it.

    I wish I had pictures of the 30 lbs of Pork Roll I did last week... it's all part of getting ready for camping season.

    Bacon is in 2 weeks.

    Dried beef is in the analog MES and the Canadian Bacon is in the propane Ozark Mountain smoker.

    Canadian Bacon out of the smoker.

    It's pink, the red tray is washing it out.
