Picked up 2 Eye of Round roasts.

Will cure one with TQ, sugar and spices then smoke and cook.

The other using cure #2 and spices then placed in Umai bag.

This is my last umai bag.

Are collagen sheets as easy and efficient to use?

Never tried them but always looking at new methods.

Thanks

Both in fridge curing... used fresh rosemary for the bresaola. Didn't have fresh thyme, but the dry stuff i have sure smells good!

The main difference between collogen sheets and Umai bags, imo, is that you can take the meat out of the Umai bag when it's finished. The collogen sheets sort of fuse to it, and are difficult, if not impossible to remove. I've used both, and MUCH prefer the Umai product.

Thanks so much for the info!. Before I saw this post, I had already ordered some collagen sheets....
I will try them-

"I gots to know"

Watching for the Braseola.
I like dried beef but not with TQ. I prefer using cure #1 to cut the sugars.
