got the itch to "butterfly" a whole bird after i saw johnny trigg do it to a turkey on pit masters this last week.

slathered her down with some butter after a good rinse, then hit her up w/ some kosher salt, pepper, garlic and onion powder.

she's on the grill @ 3pm...looking to finish at around 7pm.

wifey gonna make some mashed potatoes and we're gonna fry up some fresh picked okra :)

hehehe...my belly was so full last night.

chicken turned out good.  after 3hrs it was probing 145...

...3.5hrs it was still probing 145.  i had told my wife to start the potatoes to have finished at the 4hr mark, so i took the bird off the smoker and put her on the gas burner on high for a good 15mins or so, flipping every other minute.  turned out great w/ i.t.s at 165-170

so good i couldn't get a picture before they picked her!  lol

the white meat was so moist and the hickory really came through this time without all that tony c's on it.  gooooooood...  good!

oh, and we went w/ can green beans instead of the okra.  don't know why other than i wasn't in charge of the sides :p
