I went to Lowe's and bought a stand up propane smoker.. I found an easy recipe for beer chicken. The first attempt was on a windy day. The manufacturer recommended that the 2 lower vents never be completely closed. The unit also has a stack on top. I could not get the bird hot enough. The temp of the smoker stayed between 220 and 250(thermometer on door. The next attempt was the same recipe on another windy day ( the unit is somewhat protected from the wind). After 5 1/2 hours, I took the bird out and finished in the oven in my kitchen. I think possibly that the cold air blowing through the smoker kept the bird cool or the beer kept the bird cool. I also tried on the second attempt to cook some potatoes. After 2 hours they were not cooked. I know that on chrcoal models, the ventelation makes a hotter fire. I wonder if the ventelation on the propane unit introduces more cold air and cools the food. In between the 2 chicken attempts, I smoked some turkey legs. This was on a calm day and they cooked faster than the recipe said that they would.
