Double Smoked Ham...All but a distant memory

Well it started off correctly all skinned and trimmed:

Then disaster struck and we lost power for 20+ hours. Soooooo.

Thanks for the point Richie, I don't think I can get dry ice in my neck of the woods - to remote. We didn't lose power during the main storm we lost it the next day go figure. By the time we lost power all the ice was bought up. The only thing I saved was the beer and cheese.

Real bad luck there Chris, losing everything ĺike that.
I live diuble smoked ham. It makes fantastic sammies.

Very true Gary. Double smoked ham is really versatile. So many options with the leftovers.

The ham looks great. I live in the Canadian Rockies and power can be touchy. I have 3 insulated camp coolers. I keep ice packs frozen in the freezer. The freezer is good for 30 hours with one opening. The fridge is good for 6 hours with no openings. After 6 hours, I take the ice packs out of the freezer and into the insulated camp coolers. I put stuff from the fridge in the camp coolers. Everything is ok for 24 hours then. Unless the power is out for a long way around, I mooch freezer space from friends if it is going to be longer than that and buy ice to keep the camp coolers going.

Thanks Disco, we're looking into getting a generator. We used to have a freezer in the garage that we would store ice and food in. However since the kiddo's have moved out it just wasn't practical any more. I do have three coolers, but couldn't get my hands on any ice in time. Thanks for the like.

To bad about the tasty looking ham. Generator sounds like the way to go.
 
Sorry about losing that Ham, Chris.
I have a Good Generator for those times that we lose Power from hours up to 6 & 7 Days here.
The first time I borrowed a contractors Generator & ruined my $600 Microhood.
Now I got a Honda 3000is, with inverter technology.
This one won't harm a Microwave or any computer you run with it.
So be careful which Generator you get & what you power with it.

Thanks Bear good info to know. We have a place here that sells Honda generators. They are small and efficient, but cost a bundle. My wife and I are currently weighing the ROI for the unit.

I feel your pain. A week ago Sunday I smoked about 45 pounds of pork shoulder into pulled pork. Monday morning got a call at work from my wife that the fridge died overnight. Fortunately I had frozen most of it in our big freezer the night before. But the 5# bag of meat that I had in the fridge for dinners and lunches that week was 67 degrees in the center by the time I got home and stuck my instant read in the center of it. So into the trash it went. That one hurt.
