I'd say anything you'd smoke might be good with them.
Sounds like they are good for a wide range.
But Oak is a strong wood, so probably get a strong flavor.
Under smoke, then smoke more to find your taste level.
Is this pellets from Whiskey barrels?
I'm curious what you think about the flavor.
Gary I think u would have to the booziest pallet on earth to tell the difference IMHO
Any wood used straight up will be far stronger then pellets again IMHO

Oak is a mild, fairly neutral flavor. This is the reason cheap pellets, like Traeger and others, mix it with flavor woods like Apple, Cherry or Hickory. Oak is blended with flavor woods manufactured in the Eastern States and in Western States the flavor wood is blended with Alder...JJ
