Just finished a batch of BF deli ham. Delicious.

Looks great. We, well me, needs a write up on this
We are in the preliminary stages of chasing Black Forest ham. We are all over the target and it blows Boar’s Head out of the water, but we aren’t finalized yet so no write ups as of yet. We will get there. I have some feedback coming and others working to duplicate the process, we will see. It’s very good though.
 
Please share recipe when you are happy with it. I would love to try making as it looks delicious. Nice job!
 
I am soooooooo in the car on this ride!!!! I am looking forward to your take on how black forest ham is made, it is one of my favorites!!

Ok, here is the update. We are in the treasure vault, I think. It’s not perfect yet but definitely above anything you have tasted ham wise from the deli.

I have given my recipe (PM) to 4 people here on the forum, all ham making guys, (you know who you are) as of now only 1 has made it and reported back. It’s all positive so far.

I won’t share this over the open forum. That said, any active member who is interested, you can PM me and I will share it with you. But to the lurker or gleaner types that don’t participate here no way.

First, the ham looks great!

While I'm stabbing myself in the foot suggesting this, maybe an area of the forum could be available only to paying members, or at least only registered users ( helps my foot wound) for this kind of sharing. You make a reasonable point.
 
Looks amazing - thanks for the idea! Currently in the process of moving house and travelling, but will give this a crack when we get back. Nailed a Christmas Ham back at, believe it or not, Christmas time likely before discovering this forum - doubt I took photos etc back then but the family were very happy with it and the smell was amazing!

Keen to nail a picnic ham during our winter - if for nothing other than getting better quality sandwiches for work lunches! Probably better economically that buying it weekly as well. That reminds me to put a cryovac machine on the shopping list..
