Day off today so I did some ribs

I put my own homemade rub on them. I smoked them at 250 for 3 hrs then turned it up to 350 for another hr. On the coals I did them for about 2 hrs at 350 to 400. I am not sure what pellets were in the auger but probably a blend of some sort.

I used my Traeger today to see if what other people had been saying that the smoke flavor is not as strong on the Traeger then when using a wood burning smoker. I have to say this is true. My son said he agreed with me.

I usually smoke ribs at 225 for 5 to 6 hours, to give them a little more time in the smoke. I have been using Pit Boss Competition Blend for most smokes, but when I want more smoke flavor, I use Lumberjack in my pellet smoker. Last brisket was done with hickory, last shoulder with cherry.
Your ribs look very tasty. Were they tender ? Finished fall off the bone, or with a little bit of chew ?

The smoked ribs were little bit of a chew and the ribs done on the coals were pull off the bone. My son said they were perfectly done but I said nope over cooked according to the pit masters
 
I have to think that's a matter of personal taste. I prefer a bit of chew, my wife likes fall of the bone. One of the best things about smoking at home is being able to make what you like.

they look good from here, I usually smoke my ribs around 200 for the first 3-4 hours then 250 until done usually another 2 hours. you can always look into a pellet tube for more smoke.
