Day 1 for new member (me) and a beginner smoker (1 year) saying hi.

    Hello all, and thanks for what I suspect will be a great resource and a fun place to interact.

    Precise1 because I was called that for being a precision machinist and it is used at any forums I frequent (which is only a few). I have a lot of hobbies and usually try to do more than I realistically can, but one thing I will never get away from is cooking!! I like to cook and I love good food, so here I am. Not saying I can make anything (I don't bake, yet...) but I'll make anything from sushi to stew to curry to smoked salmon well. Northern California makes for a diverse palate...

    I bought a Masterbuilt 30" electric smoker for $150 last Black Friday (the one that seems to have some quality/durability issues) and it has probably paid for it's self already. I had never experimented with smoking other than a smolder box in the gas grill before then, but I have since hot smoked bacon, salmon, trout, beef ribs, cheese, butter, pork tenderloin, chicken, etc. You get the idea... I share with friends/neighbors/coworkers when I get a recipe worked out and get requests for my salmon and chicken, even from the local butcher... :)

    The next step I am considering is buying the Smoke Daddy Big Kahuna to plumb into my existing Masterbuilt for cold smoking/hot smoking augmentation and when the Masterbuilt fails (if it is not easily fixed) I'll have a dedicated cold smoker and buy another hot smoker.

    I still have a lot to learn and have been having a lot of fun (and darn good food) along the way. I'm looking forward to reading up and picking your brain. Figuratively, not for the smoker... ;)

    Welcome to SMF. Sounds like you have some good history going with your somker.  I would recommed that you look into this product ( A MAZE N SMOKER) before you go and buy something you are not going to be happy with in the end.  Almost everyone I have ever spoken with who bought a smoke pistol has had cresoste issues at some point. There are lots of reviews of guys and gals using the AMS with great success here. Looking forward to seeing some great qview from you.

    Thanks for the welcome guys, I appreciate it. It seems odd though as I am a Moderator on a 4x4 web site and am usually the one welcoming the noobs...

    I had actually read up on the A MAZE N SMOKER and the member who makes them (Todd Johnson IIRC?) and it seems like a good product but I don't like the idea of having to buy the saw dust. I know it is not very expensive but I don't like the idea and I have several bags of chips/chunks and appreciative neighbors have given me sections of plum, apple, oak, etc to cure and use. Not to mention I have just bought the Smoke Daddy cold smoke generator. Cresote issues?? Meaning build up or taste on the food?? Fire hazard?? Well, even if it is a complete disaster it won't be the worst choice I've made over the years!! I can always buy the AMNS if it doesn't work out. Thanks much for the tip...

    bmudd, that would put you in the Placerville/Auburn/Colfax triangle?? Forest Hill maybe?? I used to ride dirt bikes around that area and farther up in the mountains. I spent a little time in Lincoln and Sacramento. I'm currently enjoying the weather in Santa Rosa...

    Hi and welcome.

    I like the AMNS and it is the way I went to allow cold smoking (e.g. cheese).  A friend of mine got a MES30 last summer.  It had the half sized chip tray, and he was unhappy with the lack of smoke when doing even warm smoking (150F) (e.g. jerky).  He got a smoke daddy, and his reasons were similar to yours in that it can use any sort of wood, dust, pellets or chips.

    He made a post here, with pictures as to how he installed it. 


    Take a look -- might help give you some ideas.  There are probably some other threads about how to set it up as well.

    If you have smoker guards (dogs) taste testers (kids) Ones who think you have lost your mind (Wives / girl friends)because you tell them , no one gets to eat till i take some pictures,We enjoy the pics of them too.

    Thanks for the tip Dale5351. I checked out the link and that is a good job mounting it. I haven't really looked at what I need to do yet, I'm waiting until I have the smoke generator in hand to see exactly what I have to work with. I'm considering a separate stand and flex line with a quick connect if possible. We'll see...

    First off Welcome Pecise to SMF. You'll like it here for there are alot of really good folks here that would just love to help you with just about anything to do with smoking. Now there are alot of proven recipes for some amazing things here too. So if you need sign up for the E-Course it's free and it will give you the basics of smoking and some good methods to use also. So the next big thing for you to do is go out and get you something to smoke and if you happen to have any questions just post it here and we will be happy to answer them for you.

    Welcome to the forum, the qview looks amazing as well.  I would love to hear how your smoke daddy works as i am in the middle of a large build and am currently researching different smoke generators, either to buy or use for inspiration to build my own.
