OK so my daughter is going to be having her first baby in 3 weeks (or so) up in S Carolina. Im taking a week off to head up and I'll be making some smoked goodness to vac pack and bring up. So far I've got the basics, a pork butt, a brisket and a big ole slab of salmon.  I need two more things, so toss out some ideas. For some reason my fatties are in my view, substandard, so lets leave them off the list. Ideas please.
 
If you did a ham you could make multiple meals. Eat ham the first night next ham and scalloped potatoes and still have leftovers for breakfast and possibly sandos. Tri tip would be a pretty easy smoke as well. Congrats and hope it all goes well!
 
Turkey breasts or pork loin.
Pork loin I slice thin and vacuum seal. I like using it in stir fry.
Congrats on the grand-baby!!

The double smoked ham b-one suggested is a great idea, you can get a couple days of food out of that. Congrats on your grandchild! :biggrin:

I haven't smoked a ham yet, I need to read up on it.
 
OK 2 racks of ribs done and vac packed, (it was 3 but my dog had other plans for what I was supposed to eat)

Iv got a couple of butts smoking now, Should I pull them before I vac pack them or after I reheat them?

Pull first! Check your bags they should state on the package if they safe to reheat in and you can warm them up in a pot of water.
