So I can no long eat any dairy. its a PITA, but I am working it out. Dairy free cheese is really not that good. But thats what I can eat. My wife hate it and will only tolerate a dairy free pizza. not much else. DF butter is magic tho.

My wife wanted ABT's, so I made 10 with real cream cheese and 6 with dairy free cream cheese (BIL is coming over). Did a lot of AI talk about it and it said given the brand I have to add cornstarch. so we'll see how this goes. The filling for both is cream cheese with chorizo and a little honey bbq rub sprinkled on the 1/2 piece of bacon. gonna smoke at 225 for 3 hours.

Good luck with the dairy free option. I've no experience doing that, but I have made otherwise-standard ABTs minus the bacon, for vegetarian neighbors. They weren't half bad.

This reminds me of a time a few years back when I was still working, and I'd brought in a batch of ABTs for the group. I was kinda surprised/kinda flattered to see a Muslim woman carefully unwrapping and setting aside the bacon and eating the jalapeño/cheese boat. She had to know that was saturated with pork fat, but such is the power of that awesome ABT smell! It was drawing in anyone who walked past the break room. Having made the effort to remove the bacon, I hope she feels no guilt.

Thanks. DF cheese can be runny when it melts. I think that was the purpose of adding the cornstarch. I have lowered my expectations with DF cheese alot. The chorizo was real tasty, so that should help. Hoping for decent.:emoji_fingers_crossed:

In an aside are you DF because of lactose or something else? The only reason I ask is because there are a lot of options out there when it comes to real cheeses that have no lactose.

intolerance to milk proteins. so no milk anything. probably the most challenging is eating at restaurants. rarely do servers understand. if I can talk to the cooks or owners they know.

one of our granddaughter has celiac, I would say its similar to that. milk and wheat are in so many foods. till you start looking, you really dont realize how many foods are so incredibly messed with. Anyway, I could go on and on about it...but ill spare you.
