Cured Spun Chicken, Cured Pork ribs and beans

I did get in a couple of smokes this last month so here is one.

Cured up a chicken and rack of pork ribs for about 24 hours each ( wet cure Pop's ). light coat of MC on both ad some rubbed summer savory on the bird

Tied up the bird and on to the spinner in the Q with hickory chips, ribs into the smoker with Hickory and Mesquite.

Placed a tray of loaded beans , onions and red and green bell peppers under the spinning chicken.

After the ribs were rolling for an hour or so , started coating with a Honey and apple glaze

Chicken came out very good , great moist texture and flavour,

Everything came out very nice .
Mona's sister and husband were here for 2 weeks ( barely felt like a month , lol ) They enjoyed the meal so they said.

I know we did.

Had a couple boiled potatoes so fried them up with little onions.

everything on the counter , and help your self kind of meal.

Some how I forgot to get my plate shot , I suck, lol

But I did get a picture of dessert, you canb see the big pan of cake in the countertop picture. Mona made us all some strawberry shortcake.

OMG , this was a great finish to a good meal

I have one more smoke to post tonight from Aug. Summer is almost over, hopfully more smoking i my future and less work on the property on the shore.

Wow David that is a great spread. That chicken looks great. Those beans were amazing flavor I bet. Too bad you didn't get a plate shot, But at least you didn't forget the import shot of the dessert. 😁
 
That looks wonderful! I'll break out the spinner when the temps start to drop. Too damn hot right now.
 
Nice job.

I have not tried ribs in Pop's brine. Poultry yes, but not ribs. Not certain what the flavor profile would be like. Since I have a new-to-me pellet smoker, I may need to brine some up for a smoke this weekend.
 
Very nice David! That bird looks fantastic and we LOVE cured smoked ribs at our house. A local vender sells them vac packed and we usually always have a package in the fridge for quick meals....just on the grill to warm them and add some color....yours looks just like them! Well done!
 
Man is that a great spread David! Pop's and chicken comes out so good. Guess you settled in the new house now and most things finished up. Might need some new pictures.

yes the bird and the beans were great, and the ribs really nice hammy flavour, and that is what I was going for.
It was the first time for this BIL to have my Q, so I guess I was more interested in what he thought and forgot the plate shot.

BUT I did really injoy the dessert.

It has been a very warm one here also , but lots of rain also for Aug.

I have not tried ribs in Pop's brine. Poultry yes, but not ribs. Not certain what the flavor profile would be like. Since I have a new-to-me pellet smoker, I may need to brine some up for a smoke this weekend.

I do the ribs both ways dry and wet , I find them very similer. Mostly a ham profile if you will.
I like it , but do a lot of ribs just as ribs also.
Give it a try , for chicken I add lime or lemom to the mix but will also try orange extract next time as per @chopsaw Rich's recomendation.

Yes it all came out very nice , not a full on show but they seemed to enjoy the meal.
Yes we love the cured birds and ribs. That is cool that you found cured ribs near by.
And the honey apple was a nice topping to the hammy ribs.
