I just saw Richie starting some so I'll just say, I pulled mine last week, allowed to dry in the reefer a couple a days, smoked and then allowed to days open in the reefer to mellow. Today I packaged.

My only thing really to point out is the thickness. I like mine where the cook and fall apart quicker. I don't use mine as a meat more like a pickled pork to just add flavor (you can see all that flavor floating around on the top of the boiling pot when in use too! LOL.

Yes Sir that is bacon........ Local market had these on sale in January for .99/lb. Cut in pieces like this, they wouldn't sell me a side, so I bought all these they had.......

I am fixin to put on a butt tonight for pulling and think I will just throw the bacon bacn in again for a bit more smoke.
