Crispy rib tip carnitas

Taco Tuesday was crispy rib tip carnitas.
Ive been saving my rip tips that i cut from spares a lot. They are awesome to just throw in the crock pot so dinner is ready when you get home. This time I did them "carnitas style"

In the crock with salt,pepper,oregano,cumin some diced onion and minced garlic.

Sqeeze in a couple oranges and lime then drop them in.

About 10 hours later on low I took them out. Pulled apart and discard any cartilage or bones. Then back into the crock.

Then when its time to build the tacos pull out a portion and fry in its own fat until it gets some crisp on it.

Load em up with some of the meat and chalula red sauce.

Topped with some Pico and avacado

Plated up with the addition of some crispy fried jalapeons to add a little crunch!

Very tasty! Not my normal style tacos but was a very nice change for once.

That looks absolutely delicious Travis, Like! So you get the rib tips from racks of spares that you square up into St Louis style racks of ribs? RAY
 
Great idea for the trimmings off those spares. Also, I am a big fan of the fried jalapenos as well. That crunch on tacos had to blend the textures well.

Yep ! Once I trim them up I just cut the tips into about 3 chunks. Put them in a vac bag and throw them in the freezer.

thanks! The tips work really well in the slow cooker for a "pulled" meat. And your right that crunch brought some good texture to them. Especially with the soft fatty avacado!

Thanks Jake! I love them too. Wish I could find sour orange around here. Did what I could with the regular orange and the lime. Had that citrus flavor in it pretty good.
 
That looks great. I made some Asian style ribs last week from some rib tips I had saved and they turned out so-so. I'll be trying these next time - the crock pot looks like a good way to make sure they are broken down and tender. How difficult is it to make sure all of the cartilage is removed?

Thanks man! They are not bad at all! I had a couple bones to pull out and maybe a small hand full of cartilage. The last ones I did in the crock ended up going like 12 hours because I got home late from work......couldnt find a single piece of cartilage! It had completely broken down.
 
Wow Travis!! That is amazing looking. Excellent job sir and now you have me thinking this for tomorrow...but with beef tips from the 103 sub primal rib section I got not long ago. Super idea buddy!! Matter of fact, I already have the ribs out of the freezer. What's really nice about this one is that I don't have to unhinge my jaw to eat it like some of the other stuff you've become famous for making :emoji_laughing:

Thanks Robert ! Heck yeah thats a great idea for the beef rib tips! And yes much easier than the massive burgers! I have to give my jaw a break every once and a while! Lol.
