Crackling on a whole pig

I have a meadow creek pr72t pig roaster that I have been using for about a year. I have not had any success with creating crackling. I roast the pig cavity side down. I keep the temp around 225-250 degrees. I use a dry rub on the cavity but don't put any seasonings on the skin. The roaster is covered and uses hardwood charcoal for an indirect heat source. Does anybody have any tips or ideas about how a can get some crispy crackling using this method? Thanks for the help!
