So here I am. Just bought a smoker in October and have used it three times so far. Love it! My first attempt was a brisket. Flavor was good, but it was on the dry side. Rookie mistake, I did not wrap after the stale. I have another brisket waiting. My second attempt was pork ribs. Great moisture, did not like the rub I chose (Too much cumin) My last was a turkey for Thanksgiving. I'm not a big turkey fan, But the wife said it was the best turkey she ever had.

I bought a cheap, beginner Masterbuilt electric smoker. I have used Mesquite, Hickory, and Applewood chips, respectfully. Per numerous posts, I "modified" my smoker before the first use by putting more air holes in the bottom, seems to work fine.

Not sure where to go from here. I'm looking at pork butts. What I REALLY want is to pull off a recipe for a brisket like Bodacious BBQ in Texas.

Can you tell us if you are using the Digital (electric controller) or Analog (dial controller) Masterbuilt Smoker?

If you are using the digital Masterbuilt, usually referred to as the MES, you can do a few things to really go to the next level. Here is my MES with the Mailbox Mod and the A-Maze-N Pellet Smoker (AMNPS):


With an MES you can upgrade to using the AMNPS and get perfect Thin Blue Smoke (TBS) with ease.
With perfect smoke you can do a Brisket without wrapping and apply smoke for hours with the AMNPS without needing to babysit the smoke at all.

I LOVE applying 8 hours of 100% Mesquite pellet wood smoke without wrapping my brisket at all... WOW!!! 8 hours of perfect Mesquite smoke is not strong and overpowering like just a little of thick white Mesquite smoke.
I dont know if it's like Bodacious BBQ (never ate there) but it is damn good.

I to just bought an MES digital 30. Lots of people talking about modifications (mailbox, holes in the bottom ). Is there a link to one area where all of these modifications are talked about?

Going to try my first smoke tomorrow. ..

For the most part the MES mods are usually really simple and very few.
  • I would claim that almost all mods to the MES are the Mailbox Mod using the AMNPS. Some use the AMNPS by putting inside the MES and skip the mailbox mod but almost all MES users seem to move to the AMNPS at some point and many use the Mailbox Mod to separate smoke from heat and separate the need to open the MES for anything smoke related
  • The next biggest mod (like 20%) would be to Rewire and use a PID controller since the MES controller and electronics suck
  • After that the 3rd most MES mods are all around trying to deflect heat and even out heat within the MES which is basically a constant battle where different things work better for different people
