Covered Stuffed Loin Chops with Honey Glazed Carrots

To start I was going to do a different wrap for these chops , but it went south, I know my mistake and will do it again on a different cook soon.

So pulled out a pork loin and sliced into 4 thick chops. 1 1/2" thick each. Cut small slit but opened up the inside a lot.
Fried up some onions and my back bacon , filled with mozza first then the fried bacon and onions. Than i tied them up
so to have round chops and close the opening for a fast hot sear.

So this is where the problem happened while the chops were cooling, the idea I had to wrap these
went all to ...I will say south. I know my problem . Will explain in an other post when I know I can fix the reason.

( Yes I removed the twine after they cooled down and before the wrap )

So was going to have mashed potatoes anyway so I wrapped them in some of the mashed potato and baked in the oven at 425
deg. for 45 minutes. Sorry broiled on hi for 8 minutes first. than baked for 45 minutes.

They cooked fantastic, The loins stayed juicy from the sear and the bacon , onion and cheese inside. The potato was crisp on the outside
maybe a little more cheese next time but it was great. Made a nice dark gravy and the Honey glazed carrots were perfect. It
was a little redundant with the mashed potato, but it was better than not eating , because that was not going to happen. lol

I know the last picture looks like a mess .....BUT ooo so good

Looks great. I will pass on the carrots thou. LOL... cant stand glazed carrots well cooked even. Raw, I can eat them everyday for a snack.

The plate looks good to me! I Love Glazed Carrots. I simmer in water with some Chix Base until Al Dente. Then they go in a pan with Butter and a 1/2 cup or so, Maple Syrup... JJ

Yes plate was good , and I like the carrots glazed . the chicken base and maple syrup sounds good also

Dang, David, you never cease to amaze me! How do you come up with this good stuff?
The mashed potato cover looks fantastic.
Half loins are still on sale a lot here and I'm always looking for ideas.
We're fans of slow and sweet cooked carrots also.
That plate doesn't look messy at all :-)
