It was plate licking good, like I mentioned I had to force down a second chop and more carrots.
Still 1 left for later.

Dang, David, you never cease to amaze me! How do you come up with this good stuff?
The mashed potato cover looks fantastic.
Half loins are still on sale a lot here and I'm always looking for ideas.
We're fans of slow and sweet cooked carrots also.
That plate doesn't look messy at all :-)

I like using loins for things as the price is still good around here.
The mashed potato cover was a quick stand by for what i was really going to do. But it
failed to work so the mashed stepped in to save the day. I think it really worked well.

And searing the loins really helped to keep in the juices.
I will make these again

Yes we do , and loving it. The meal was all done the way I wanted until the cover for the stuffed loins .
But the mashed saved the day , and it was all great
