Hi I just bought a propane smoker and I would like to smoke some country style pork ribs. I was wondering if I should brine them and does anyone have a recipe for a good rub? How long should I smoke them at what temp and should I wrap them in foil?
I have never brined CS ribs....... I have found that the thicker ribs, which have some fat on them do fine with no foil, pulled around 190* The thinner and leaner ones I like to foil around 160* and pull in the 180s* I add some of my mop to the foil.
like everybody said...rub and sauce is all you need... just keep in mind that country style ribs do not take as long as spares, they will dry out quickly, just keep an eye on them..
