Could use some help

I just got a returned Maverick et733 and did a test run in my MES30 and temp ran crazy. Not sure what is going on. Very confused.The mes temp ran over the set temp by up to 10 degrees which I never noticed before having a reader till now. I set it to 135 and the readout went up to 149. ?? But the 733 would change like crazy.

I'm new, what am I missing? Please help.

My Maverick 733 doesn't change like crazy.  I have one probe in the meat and the other in the smoker.  The display alternates between the two settings.  Is this the jumping all around that you are describing.
