Bought 2 7lb beef briskets from Costco.  Plan is to corn both of them and then smoke one for Pastrami.  Have a question though.  If I use Pop's brine, would a one gallon batch be enough for both briskets?

Any tips or tricks?

That depends on the container you put them in. Make up a gallon batch and if that's not enough to cover both completely make another gallon. I bet you'll be closer to 1 1/2 - 2 gallons. Good luck and post some q-view!
 
Ok, here is the Qview, such that it is:

The main act, a 5 1/2 lb and a 6 1/2 lb beef brisket from Costco


and now they are ready for their two week nap in the fridge weighed down with ziplocs full of water.

Looks Good! When I get back from vacation, I'll be doing some Pastrami and more bacon. All of which is going into Pop's brine before we leave, sure hope the fridge doesn't die!
