Corned Beef Ready for St Patrick’s Day!

I started off with 4 well trimmed brisket flats. Used 2 gallons of Pops Low Salt Curing Brine. I added 1/2 cup of pickling seasoning and 4 or 5 fresh bay leaf. Let them soak with an occasional stir for 7 days. Vac packed and into the freezer. Ready for St Patrick’s! Friends welcomed to come by. BYOJ (Bring Your Own Jamison’s)

I'll bring the colcannon.
Love it. So a funny story about my family. My grandparents on both sides were Irish immigrants. My dear wife’s family... All German. Early in our marriage we went to dinner at my in-laws . Great people by the way.
Anywho... They were making a huge deal about these special “German” mashed potatoes. And That it had cabbage bacon and a dash of ACV. LOL. I kept my mouth shut and enjoyed some pretty darn good colcannon. B

I don't have enough vacation time saved up to sit in front of the screen until St. Pat's day, but I'll be checking back for updates. My Grandma's family still has a farm in Cork.

Cool. That's where my mom's family is from.
 
Ok I'm waiting need some rye bread and spicy mustard? For me just plain will work. For the Jamison's I'll bring the coffee and cream.

We don’t eat much bread here Warren. Dang blood sugar. I do miss those Ruben Sammies.
Typically roast them in the oven on a bed of cabbage. Serve with spicy mustard. B
