Being fairly new at smoking I started out with some recipes and some estimated times. This worked some of the times. Two weeks ago I purchased a Thermapen and a Maverick 732 and started cooking to temperatures. These darn things are expensive! But it gave me a mega-boost to my smoking. I was overcooking stuff. These thermometers are well worth the money spent.
 
Not only that but now you know the food is cooked to a safe temperature.   Good thermos really are helpful
 
It is amazing what happens when you use the therms instead of time - I have been cooking for 55 + years and it was a real surprise to me when I started using therms for the smoker
