Cold smoking on a Big Green Egg using the a-maze-n

The Big Green Eggs have a lot of thermal mass... You will need to get the temperature of the egg to above ambient.... The egg acts as a chimney... If it's too cold, when you open the upper and lower vents, the air will flow downward... That would be OK if you put the AMNPS above the fish... then the smoke will flow downward with the draft.... As the egg warms, you may have to move the smoker below the fish....
