Cold Smoked Hard Boiled eggs

When I smoke cheese, I let it rest then vac pack and let it mellow for a month. But now I want to smoke some eggs also. So can I eat them right away, or they have to mellow?
 
I just called Amazin and spoke to Todd himself..
Eggs can be eaten right away..
What an awesome guy what a great company!!!
 
 Lemans, this is my opinion only. From water to water buffalo, if it can’t be consumed shortly after smoking, it has been over smoked. 

Below are some smoked eggs I did. They are smoked, spicy hot, pickled, deviled eggs, topped with a spear of smoked salmon in a ring of black olive, setting on a bed of kimchi and surrounded with pickled herring with green olives. It was a man thing. LOL

When making deviled eggs, the eggs are halved and the yolks removed. This allows for the maximum surface area for the smoke to adhere too. I simply throw a couple chunks of whatever wood I want into one of the Cookshacks and turn it on. Egg whites take on smoke rather readily. When the smoke starts rolling, usually a heavy white, the eggs are placed into the smoker for approximately 15-20 minutes. This is enough for a nice layer of smoke on them. While the eggs are smoking, devil the yolks and fill the whites when done.

Below is an example of eggs, crackers and paprika ready for smoke.

Looks great but I gotta pass on the kimchi.
 
Am smoking a couple of Corned Beef Briskets and a Pork Butt tomorrow , read these  posts and boiled some eggs and picked up a block of White Cheddar and Pepper Jack !

Damn, that's a beautiful plate, and everything sounds perfect. Now, I'm hungry.

BTW, I like the way you smoked your eggs by doing the halved whites only. More smoke penetration in less time.
