I forgot to post these.
While i was doing the elk sticks with the pellets i needed a gift for a friend. He loves smoked pickled eggs so i made some for him.
First i steamed the eggs.
Steaming eggs eliminates the gray around the yolk like you get when eggs are broiled.
While the Elk sticks were blooming i took the remainder of the pellets and hit the peeled eggs with some smoke.
Made the pickle brine, vinegar, pickling spice, jalapeno and red pepper, salt, sugar and 1 tsp worcestshire, Heated to broil and cooled.
Added the eggs to the jar. Sit the jar in a cookie sheet or bowl so you can over fill. I used a fork and gently pushed into each egg into the yolk in 4 places, this will allow the pickle solution to penetrate into the yolk.
Ready to gift.
