Cold Smoked Eggs

I forgot to post these.

While i was doing the elk sticks with the pellets i needed a gift for a friend. He loves smoked pickled eggs so i made some for him.

First i steamed the eggs.

Steaming eggs eliminates the gray around the yolk like you get when eggs are broiled.

While the Elk sticks were blooming i took the remainder of the pellets and hit the peeled eggs with some smoke.

Made the pickle brine, vinegar, pickling spice, jalapeno and red pepper, salt, sugar and 1 tsp worcestshire, Heated to broil and cooled.

Added the eggs to the jar. Sit the jar in a cookie sheet or bowl so you can over fill. I used a fork and gently pushed into each egg into the yolk in 4 places, this will allow the pickle solution to penetrate into the yolk.

Ready to gift.

All depends on how long you stay outta the jar....LOL

Really though they will keep in the fridge for over a month. I have however at some bars and pubs around the area seen larger jars just on the counter. So i guess it would be your call on how you wanted to display...HAHA
 
Never thought of steaming an egg??   How long do they go??  Man I would love to try those!!
I set the dial at 18 mins then put them in a cold water bowl.

I made another container this morning.

I love pickled eggs. I'm long over due for another batch myself. I have been trying new recipes constantly to try and find the perfect recipe for me. I've found many I like but still not "The One".

Looks great Nepas. I'm surprised you didn't find a way to inject them with sausage!


If you soft steam the eggs so only the white is fully cooked, you would be able to suck out some of the yolk with a poultry injector.  Use a modified injector needle to make a mini sausage "stuffer" to press a thin rope of sausage into a frying pan.  Cook that & then painstakingly stuff that back into the egg & finish steaming the yolk/sausage mixture.

Not sure that would be worth the work, but the look on someone's face when they bite into a hard boiled egg to find out it got sausage in it may be worth it.  
 
How about this then.  Someone just gave my wife a set of Eggies https://www.geteggiestv.com/ for a Christmas gift.  These little egg shaped containers are made for boiling eggs without the shell.  How about making little yolk sized sausage balls, smoke those and drop one into each Eggie.  Then separate your  raw eggs and fill the Eggies with just the whites.  Now when you cut open your boiled egg you'll have a smoked sausage center instead of a yolk.  
 
i just saw this and am going to to try making sausage stuffed eggs!

what a great holiday treat would that be for the kids , or the kid at heart!
