Cold smoked air dried narrow belly

In wet brine for 3 weeks, dried to touch, cold smoked 40h, air dried for two weeks.

Lots of flavor in a small package....    I'd eat it...

I am not slicing this. Is more like a cold cut - can eat raw. Close to a pancetta but different taste. I am gonna poach 1/3 with spices, though. If I like it will do another 1/3.

Cure #1 or #2...   2 3/4% salt maybe ??   Do you know the % weight loss ??

Are you following a recipe or is this just a trial run thing......
