Classic Carne Asada Street Tacos!

We usually do Carne Asada on the gasser cause it’s easy however the Christmas season means doing it the right way!!

So got the X-Fire prepped up with some hot coals and mesquite chunks and put the grate just a few inches above them....

Turn one after about 5 mins.....the coals are HOT!

Bingo 12 mins and all done!

Carne Asada isn’t complete without grilled green onions!

Sliced it thin then matched cilantro lime rice, cheese, cilantro, salsa and cojita!

Maybe it’s just me but I agree with you! Watching a full grate full of meat sear over coals is a “good look”. Lol

Man, the only trouble I'd have with those tacos would be to stop eating them. That is goodness on a flour tortilla, Like. RAY

Thanks xray! Yea cooking over natural fire/coals has become my absolutely fav way to prepare protein for glutenous consumption!!!!

In fact, I have a pretty good source that says the X-Fire may find its self out fitted with a rotisserie in the coming year......

Anyone used venison, like the lean backstrap or top round for Carne Asada ?

I haven’t....you would have to be real careful cause either would dry out quick.....if it was marinated and then just flash seared on super hot fire it should work good I suspect
