The stuff I'm talking about , That's the Brand name . Stadium Mustard . I think it has some horseradish in it .Stadium mustard up this way is pretty much a slightly spicy brown mustard.
I never made mustard before. I might give this a shot. Note: Not my recipe.
Homemade stadium mustard:
- 1⁄2
cup brown mustard seeds- 12
ounces dark beer- 1
cup mustard powder- 1⁄3
cup honey- 1⁄2
teaspoon kosher salt
- put mustard seeds and beer in a non-reactive bowl and let stand overnight.
- pour into a food processor and pulse several time to break up the seeds. then run the processor until the seeds are ground up to the size you prefer(the bigger the seed pieces, the greater the heat).
- add the rest of the ingredients to the food processor and blend completely, please note, this should be thicker than yellow mustard, but not much. Store in a squeeze bottle in the fridg.. Enjoy with grilled brats (family favorite)

Chocolate in Chile or Chili isn't too strange.
As a matter of fact I use it in my competition Chile.
Chile's Chipotle Chile / Sweet Chipotle Chile
It provides a great hint of Mole to the dish, adds another layer to the flavor.
Know what you mean Bear, I have to ratchet it back now, but a fling every now and then is still OK.
