If you like Mexican food this is a sauce that can take pretty much anything from tacos to quesadillas to another level.

It is only a few ingredients but will level up almost anything. I love it.

1 Cup Sour Cream
1/2 Cup Mayonnaise
1/2 cup fresh cilantro
2 large garlic cloves
2 Limes juiced
Salt as needed

I will add in my enabler mode for this. It is a very small version of a veggie chopper great for garlic cloves. I prefer to slice them first then chop them very tiny with this.

Buy it cheap from Amazon.

You get very fine garlic.

Toss it all in a small blender and you will get this in the end.

I spoon this on so many of my Mexican dishes and never get tired of it.
 
Sounds great Chris, I make something similar that I use on my rish taco's.

Oh, and I knew you would like those choppers, they make quick work out of dicing.
For garlic, I like to smash it, and work it over with the side of the knife, adding a pinch or two of coarse salt which helps you work it into a paste. I eat a ton of garlic, when I was dicing up a bulb at this pizza class I was attending, the Chef said let me show you something. He smashed the whole bulb paper and all with one hard smack of the side of his meat cleaver, then he added some coarse salt and worked it into a paste in less than a minute. From that point on that is how I process garlic bulbs. It's amazing watching people that are great at their craft work their magic.
The class was only two days, but I learned a lot from the dude, and his prep chef's. I need to look for some more cooking classes to take. I live about 35-40 miles from the Napa Ciliary Institution, this time of yr with school being out, they offer up some great classes, with world class Chef's.
They aren't cheap, but they are totally worth the price you pay. I'd like to find a butchering, sauces, and sourdough bread making class, to take this summer

Big fan of this type sauce on Mexican dishes. I'll give this one a go. I usually just use 100% Salvadoran crema with the other ingredients.
 
NICE. Used to make one VERY close to this. Last summer I played around with various doner/kebab white sauces. Real small batches but probably make 20-30 versions.

The winner:
4:1 sour cream:veg oil (like 1/4C SC and 1T oil)
Fiesta jalapeno salt to taste (shake or 2/not much)

Yes I did add cilantro to it at times when I was in the mood to clean the blender :emoji_laughing: Seriously though, I prefer using a Texas cilantro+onion mix in the food over adding to the sauce.

Very close to the sauce we use on fish tacos. The base is the same....either sour cream or greek yogurt with mayo. for the fish taco sauce, we add cumin, chili powder, diced jalapeno, salt, black pepper, cayenne and a little dill and/or tarragon.

Sounds delicious as well, Keith could you share the recipe quantities you all use? Love these kind of sauces and always looking for a new addition. That sounds like a winner!!
