CI Seared Smothered Rib Eye (W / Pics)

I continue to get PM's from people asking me to keep doing off-the-wall stuff with CI, so I tossed this together the other night. Wasn't too sure about it going in so decided to do it on a day that Tracy was going to be out. Yep...she made a 3 hour trip to go get her hair cut. Go figure....This one had been bouncing around in my mind for a couple days and decided to go for it.

This one goes out to Ray ( @sawhorseray ) and Zach ( @Misplaced Nebraskan ), both of whom are on the fence about CI cooking. Ray bought his skillets but as far as I know has not used them....unless I missed something. Zach just keeps saying he's gonna get some every time somebody posts something, has them picked out on Amazon, but has not done it yet. Hopefully this one will get them motivated :emoji_astonished: Hmmmm guys....CI with the Vortex?

Start with an 8 oz. CPB rib eye with a hefty dose of my beef rub

Cut up some fresh asparagus tips and onions then put in an 8" CI skillet with garlic and butter

Dice some tomatoes and chop up some grilled bacon left over from burgers a couple nights ago. These will go in later.

Saute for a few minutes just to soften them a bit

Add tomatoes and bacon then set off to the side to keep warm

Got another 8" CI skillet screaming hot with some butter. Toss in the steak. Wait about 3 minutes and flip

Remove from heat and let cool for a couple minutes, add a ton of shredded Swiss cheese, then back onto the grill

Load the veggies and bacon on top and cover with the pizza dome

Grill up some buttery garlic buns ala Ray

About 10 minutes later....

This is pure money!! Wasn't sure about the steak but I lucked out. Perfectly cooked

I've done several CI meals but this one was without doubt one of the most flavorful. It was really good!! All that charred cheese in the bottom of the skillet and the juice/spices from the steak were perfect for dunking the bread into. It was heavenly!! That's one of my favorite things about a good steak though: dunking some sort of bread in the juice. I had concerns about making this for Tracy without a test run but there's no doubt she'd love it. This one WILL get done again, foe certain. I just need to get another block of Swiss cheese and shred it.

Well you got me now Robert, that looks to be wonderful without a ton of carbs, Like! Most CI cooks are carb intensive with pasta, taters, or tortillas and the last few days I've been working on losing some of the 15 pounds I've gained since the start of the pandemic. Of course I could always cut back on the empty calories that beer and whisky provide, but come on now, get real! RAY

I bet the pan drippings/crust on the bottom was amazing with that bread! Amazing combo of foods and flavors with this one! Thanks for the nudges!

It was really good Ray, no doubt. Not sure what the carb count for the cheese is but if it's high, I'm sure you could work around it. This one does have a couple things we both love: a good steak and fresh veggies. We also like cheese...a lot.

EXACTLY!! So many other places to cut calories without having to give up the necessities of life.

Everything was 8's: 8" CI skillets and 8 oz steak.

Thanks Zach, and yes, the drippings were one of the best parts of the meal. It really broke my heart having to eat all the steak to get to the drippings though :emoji_laughing:

No doubt, Ray has buns of steel. Either that or they are just crusty from age. Not sure which :emoji_wink: I actually have another batch poofing as I type. first batch didn't last long.

Looks great Robert! Steak done just right and love those veggies. I’m hooked on cast iron too. I’ve had a 12” for years I rarely used. I have a pretty fair collection of Commercial non stick Calphalon and an All Clad. Over the last year I’ve used my CI way more. I’ve added a 17” and 8” Lodge and a Lodge cast iron fajita pan. Love them.
 
Nice cook . Steak looks perfect . Cast iron works great .
 
That's awesome Robert! And I'm with the rest of them...always enjoy your creativity, especially using CI, so keep them coming. I think @sawhorseray would use his cast iron more but probably got shipped to him in his unopened 360 air fryer box! :emoji_laughing:

Great looking meal Robert! That steak is just money with everything else surrounding it is just bonus money!

Did any of that cheese crisp up? That’s my favorite, eating the burnt stuck on cheese. They’re crispy cheesy chips.
