I’ve done a couple that were amazing pulled and another that was pretty dry. I guess it must just relate to fat or lack thereof?

looks good Richie but that cut actually looks like it out of the shoulder clod and not from the chuck roll. that could explain the dryness. sometimes places will do this when chucks are on sale because clods are cheaper.
