Well, it's time for that annual family tradition where we all gather with our relatives and loved ones for the Christmas feast.  Here is our contribution to the family gathering tomorrow....

Was told to bring pimento cheese sandwiches, and "a desert"....  Being the stubborn and unpredictable member of the family, I decided this is what we are taking:
  • Pimento Cheese sandwiches (old family recipe and this is the price of admission to the gathering. I seem to be the only one who gets it just right according to the other relatives).
  • Double smoked spiral sliced ham (re-smoked over cherry on the WSM)
  • Pork Shots (pig crack - thanks to the inspiring posts in this forum of course!!!)
  • Hash brown & cheese casserole
  • Apple Pie Moonshine (the legal kind)
  • Chocolate cake
  • Woopie pies (another family tradition)
  • Angel cookies (another family tradition)
  • Cranberry Orange coffee cake with icing drizzle
  • Gingerbread cookies with icing drizzle
  • "Snowflakes" aka Swedish Timbles" dusted with powdered sugar
And for our breakfast...
  • Fatty slices
  • Breakfast puffs (another family tradition)
Just bring sandwiches and a desert, hummmppfffffff......  I don't think so!  If it ain't smoked or got some kind of alcohol in or on it, it's not a special occasion IMO.

Unfortunately, we have been prepping food pretty much all day and narry a photo was taken during the prep.  I'll try to post some of the finished product photos later.  Don't want to get put on the naughty list do we...

Got to admit that pimento cheese sandwiches are a bit odd for a tradition!  But I happen to love them.

Sounds like quite a feast,  enjoy.
 
Ok,  I got a few photos, but most of the stuff is still in the works.  The PC & hash brown casserole will not be spread or baked until Christmas morning.

Ham is on the smoker now. I'll try and snag a photo or two when I put on the glaze in about 30 minutes.  Then I'll try to remember to take photo's of the pork shots when I put them on.   Fatty's are done from the other night's smoke and the rest is still a work in progress....

Pimento cheese is mixed and the flavors get to meld overnight in the fridge before being spread on potato bread......

Now thats a load of family traditions to keep and eat but they sure do look like some really tasty traditions thats for sure. 
 
I'm blessed to have a wife who is a "school lunch lady".  They know all the secrets....

Psssssssst, wanna buy a lunch room roll?  I got them fresh and hot (nothing better to put fatty slices or fresh Q in either).  Now that alone is worth it's weight in gold.

Ok,  Just glazed the spiral sliced ham so here is a photo of that.  Internal temp is at 105 right now after smoking over cherry wood.

The pimento cheese sandwiches will be spread in the morning while the hash brown & cheese casserole bakes up.   We are pretty much done (in more ways than one) for tonight.

Pork Candy/Crack is done......

Only thing left is to bake the hash brown & cheese casserole and spread the pimento cheese on the potato bread slices in the morning.  I'm bushed and headed for the bed.....

Ok, here is the final shots of the stuff I made this morning.  The wife threatened me with bodily injury if I stopped to post them earlier as the car was loaded and everybody else was ready to go to the relatives for the feast.

So many hours and calories later we are back home, well fed and tuckered out.  The kids (Ok, young adults) have headed off to their respective caves to delve into the new video games, puzzles and books.  I'm pondering sleep......     

Perhaps its time to sample that apple pie moonshine first though....

Here is a recent thread with some more info.  There are several others in the forum also.  It's basically a 1/2" section of smoked sausage wrapped in bacon which is held in place by a toothpick.  The bacon extends above the sausage to form a little cup into which you pour a mixture of rub and brown sugar.  When it smokes, the sugar will caramelize and it's just an awesome tasting thing.
